1 Tbsp Vegetable Oil
4 Corn tortillas
1 Can Serious Bean Co. Chipotle Beans
4 Large eggs
2 Tbsp salsa
1/4 Cup Queso Fresco, crumbled
2 tsp Cilantro, chopped
2 pinches salt
2 pinches ground black pepper
For the beans:
Heat the beans in a small pan over medium heat.
Once the beans are hot, use a slotted spoon to remove 1/2 cup of beans and set aside for garnishing.
Use a potato masher to smash the beans into a paste, then simmer over low heat to thicken.
For the tortillas:
Heat a large skillet over medium heat then add vegetable oil.
Toast the tortillas in the skillet - approximately 15-20 seconds per side. They should be lightly browned and crisp, but still flexible. Add additional oil as needed.
Spread the chipotle bean paste evenly over two of the toasted tortillas.
Sandwich the remaining two toasted tortillas over the top of the bean paste.
Fry eggs (we like sunny-side up) in a skillet and two eggs over each tortilla stack.
Warm the beans in the skillet, then divide evenly over eggs.
Top eggs and beans with salsa, queso fresco, and cilantro.
Season with salt and pepper.
