We love this hearty soup that's just spicy enough, and packed full of veggies.
• 6 Cans Serious Bean Co. Chipotle Beans
• 64 oz. chicken stock
• 16 oz. ground chorizo sausage
• 1 small/medium sweet onion – diced
• 1 ½ Cups celery – diced
• 1 ½ Cups carrots – diced
• 12 oz. corn
• 1-2 bay leaves
• 2 Tbs. Worcestershire sauce
• 2 ½ tsp. kosher salt
• 1 tsp. black pepper
• Olive oil – as needed
• Tortilla strips – for garnish
Sauté diced sweet onions with olive oil until they are translucent. Set aside to add later.
Sauté chorizo sausage until browned and fully cooked – drain oil. Set aside to add later.
Puree/process/blend 3 cans of beans including liquid until smooth. Add mixture to soup kettle.
Add to soup kettle: sautéed chorizo sausage, sautéed sweet onions, diced celery, diced carrots, corn, 3 remaining cans of beans (including liquid), bay leaves, remaining chicken stock (64oz.), Worcestershire sauce, salt & pepper.
Bring to simmer over medium heat for 30 minutes, stirring frequently.
Serve immediately in bowls, garnished with tortilla strips.
