Colorful and packed with veggies, this soup will make you feel like spring is right around the corner.
• 4 Cans Serious Bean Co. Cracked Pepper Beans
• 64 oz. chicken stock
• 8 oz. diced/cubed ham
• 1 small red bell pepper – diced
• 1 small green bell pepper – diced
• 1 small red onion – diced
• 1 Cup celery – diced
• 1 Cup carrots – diced
• 1-2 bay leaves
• Small bunch of green onions – sliced thin for garnish
• Olive oil – as needed
Sauté diced red onion with olive oil until translucent. Set aside to add later. Sauté diced/cubed ham with olive oil until light brown outer texture is achieved. Set aside to add later. Sauté diced peppers (red & green) with olive oil until soft. Set aside to add later. Puree/process/blend 1 can of beans including liquid with 16 oz. of chicken stock and process until smooth. Add mixture to soup kettle.
Add to soup kettle: sautéed ham, bell peppers, sautéed red onions, diced celery, diced carrots, 3 remaining cans of beans (including liquid), bay leaves, and remainder of chicken stock (48oz.).
Bring to simmer over medium heat for 30 minutes, stirring frequently.
Serve immediately in bowls, garnished with thin sliced green onions.
