Dr Pepper Baked Bean & Beef BLAT Toast

Ingredients
1 Tbsp Vegetable oil
1/2 Cup White onion, diced 1/4"
1 lb. beef stew meat
1/4 tsp salt
1/4 tsp ground black pepper

1 Can Serious Bean Co. Dr Pepper Baked Beans, drained
1 Cup Beef broth
2 Tbsp light brown sugar
6 slices Sourdough toast or sliced baguette
3 Avocados
Salt & Black Pepper, to taste
Dr Pepper Beef & beans from above
12 Grape tomatoes, quartered
Drizzle of balsamic vinegar glaze
Pinch of fresh parsley

For the Dr Pepper Beef & Beans:
In a medium skillet, saute onions in vegetable oil over medium heat until softened.
Add beef stew meat to skillet and brown.
Drain baked beans and add liquid to beef. Set the beans aside.
Add beef broth, cover with a tight fitting lid, and simmer over low heat for 1 hour.
Once beef is tender, add sugar, reserved beans, and stir.
Continue simmering uncovered over low heat until sauce begins to thicken to a syrupy consistency.
For the toast:
Toast bread.
Smash avocado, spread over toast, and season to taste with salt and black pepper.
Top avocado with approximately 1/2 cup of Dr Pepper Beef & Beans.
Sprinkle quartered tomatoes over Dr Pepper Beef & Beans.
Garnish with Balsamic Vinegar Glaze and chopped parsley.
