Dr Pepper Bean English Breakfast Casserole
Servings

A traditional English breakfast consists of numerous components prepared multiple ways and far too many pots and pans - NO THANKS!. Our version, prepared casserole style, uses a single sheet pan and a single baking dish. Whether you're up early to watch "football" (aka soccer) from overseas, or just looking to relive a trip "across the pond" , our Dr Pepper Beans bring the flavor and tie it all together.
Ingredients
4 Bacon slices (raw)
4 Sausage links (raw)
8 Whole mushrooms (approx 1" diameter)
1-2 Whole tomatoes (depending on size)
4-6 Slices sandwich bread
-
1 Can Serious Bean Co. Dr Pepper Baked Beans
4 Eggs
Directions
Preheat oven to 325°F.
Remove the core from the tomato(es) then cut into wedges approximately 1/2 -3/4" thick.
Arrange the bacon, mushrooms, tomato wedges, and sausage links on a sheet pan. (Tip: line the pan with aluminum foil to make clean up a snap.)
Cook until the bacon is crisp and the sausage is done (internal temperature of 165°F)
Line the bottom and sides of an 8x8 or 9x9 baking dish with the bread.
Break the bacon strips in half and lay evenly over the layer of bread.
Arrange the sausages over the bread so they divide the baking dish into 4 equal squares.
Divide the roasted tomato wedges evenly into each of the squares formed by the sausages.
Spoon the Dr Pepper Beans (directly from the can) over the roasted tomatoes. Spread evenly using the back of the spoon or a spatula.
Divide the roasted mushrooms evenly into each of the squares, leaving room in the middle of each square for the eggs in the next step. Press the mushrooms into the beans so they absorb the sassy sweetness of the Dr Pepper Beans. (For a stress free morning, the above steps can all be done ahead of time, covered tightly, and refrigerated overnight.)
Use the back of a spoon to form a "well" in the beans - one per each square.
Crack an egg into each of the wells.
Bake at 325°F until eggs have reached your preferred done-ness and the beans are warm.
