Dr Pepper Bean Sweet & Sour Meatballs

Dr Pepper's blend of 23 flavors brings the sassy sweetness to this dish and the tartness from pineapple
gives it just the right balance. By mixing beans into the meatballs - their starchiness eliminates the
need for adding egg or breadcrumbs - perfect for those avoiding gluten.
Ingredients

2 Cans Serious Bean Co. Dr Pepper Baked Beans
1 lb. Lean ground beef
1/4 Cup Yellow onion, diced small (1/4")
1 tsp Minced garlic
1 tsp Salt
1/2 tsp Ground black pepper
1 Can Pineapple Chunks in Pineapple Juice, 8oz.
Hot Sauce (optional)
Directions
Preheat oven to 400°F.
Empty both cans of beans into a strainer set over a skillet.
Place approximately three-fourths of the drained beans into a mixing bowl, and set the remaining one-fourth of the beans to the side.
Add the remaining ingredients, except pineapple, to the mixing bowl with the beans.
Mix until everything is well combined, then roll into approximately 1" balls.
Place the meatballs on a rimmed baking sheet and cook in the oven for 10 minutes, or until golden brown.
While the meatballs are in the oven, empty the pineapple chunks (including the juice) into the skillet with the sauce from the Dr Pepper Beans.
Place the skillet on the stove and simmer over medium heat to thicken.
Use tongs to transfer the meatballs to the skillet with the sauce and pineapple chunks.
Add the reserved beans to the skillet, cover with a tight fitting lid, and reduce heat to low.
Simmer meatballs in sauce for an additional 10-15 minutes to absorb the sauce.
Season to taste with hot sauce. (optional)
