A quick & easy side dish that will have your kids asking for more brussels sprouts!
Ingredients
• 1 pound brussels sprouts, cut in half
• 1 tsp salt
• water for boiling
• 4 slices bacon (raw) diced 1/2" (optional, but tasty! for a vegan alternative, replace the bacon with 1 Tbsp olive oil and a few drops of liquid smoke, available in the condiment aisle of most grocery stores)
• 1 can Serious Bean Co. Dr Pepper Baked Beans
Instructions
Boil a large pot of water and add salt.
Add the brussels sprouts to the salted water and cook until tender. This should take 4-6 minutes, depending on the size of the brussels sprouts.
Drain the brussels sprouts and cool under running water to stop the cooking. Once cool, drain well.
In a medium skillet, crisp the bacon and set aside.
Add the beans and the cooled/drained brussels sprouts to the bacon drippings and stir.
Cook over medium heat, stirring as needed until beans are warm and the sauce has coated the brussels sprouts, approximately 4-6 minutes.
Serve topped with the crispy bacon pieces.
Yield: 3-4 servings depending on size.
