Jalapeño Bacon Bean Hushpuppies or Fritters
Appetizers, Jalapeño & Bacon Beans
1 quart of batter, approx 35-40 Hush Puppies
1-1/2 tsp salt
3/4 tsp Cayenne pepper
1/2 Cup sugar
1/4 tsp Black pepper
1/2 Cup milk
1/4 Cup green onions, sliced 1/4"
1 Can Serious Bean Co. Jalapeño & Bacon Beans
1-1/2 Cups yellow corn meal
3/4 Cup flour
1 tsp Baking powder
Oil for frying
In a medium bowl, combine all the ingredients down through the beans then stir.
In a seperate bowl, combine the corn meal, flour, and baking powder. Stir with a whisk to combine.
Add the flour mixture to the bean mixture and stir well with a spoon or spatula.
Heat the oil in a deep fryer to 350°F.
Using two spoons, carefully drop the batter into the hot oil one heaping teaspoon at a time.
The batter will sink to the bottom of the oil, then float to the top after approximately 1 minute.
Fry for 4-5 minutes, until golden brown on the outside.
Remove from the oil, drain, and keep warm in a low oven while cooking the rest of the hushpuppies.
Shallow fry in a skillet or Dutch oven using 1/4-1/2" of oil. Cook for 2 minutes per side.
