Jalapeño Bacon Bean Southwest Cornbread Bake

Ingredients
1 Tbsp Vegetable oil
3/4 Cup yellow onion, diced (1/2 of a medium onion)
1lb. Beef stew meat, fine dice (1/2")
1-1/2 tsp Salt
3/4 tsp Ground black pepper
1-1/2 tsp Garlic, minced
1 tsp Flour
1 Cup Beef broth
3/4 Cup Corn kernels - frozen (thawed) or canned (drained)

1 Can Serious Bean Co. Jalapeño & Bacon Beans
1 Box cornbread mix, 7-9oz. package (along with ingredients needed to make cornbread according to packaging)
Directions
Place a large oven safe skillet over medium heat, and preheat the oven to 400°F.
Add the oil and onions to the skillet, and stir as needed.
Once the onions are soft, add the beef, salt, and pepper. Continue stirring as needed to prevent sticking.
After the meat has browned, sprinkle the flour evenly over the meat and onion mixture. Stir until the flour is completely dissolved.
Add the beef broth, cover the skillet, and simmer gently for 10 minutes.
While the beef is simmering, prepare the cornbread mix according to package instructions and set aside.
Add the corn, tomatoes, and jalapeno bacon beans to the skillet and bring the mixture back to a simmer.
The consistency should be slightly soupy. If necessary, stir in additional beef broth 1 Tablespoon at a time.
Place 1/4 cup spoonfuls of the cornbread batter on top of the simmering beef mixture.
Carefully transfer the skillet to the oven and bake for approximately 12 minutes, or until the top of the cornbread begins to brown lightly.
