Mustard Baked Bean Pork Meatloaf

Ingredients
1 Tbsp vegetable oil
1/2 Cup White onion, diced 1/4"
1 Tbsp Chopped garlic
1/2 tsp Ground black pepper
1/2 tsp Salt
1 tsp Paprika

1 can Serious Bean Co. Mustard BBQ Beans
1 Egg
1lb Ground pork
1/2 Cup Breadcrumbs
1 Tbsp light brown sugar
1/2 Cup beer (or water)
1/4 tsp Cornstarch
For the Sauce:
Directions
Heat a skillet over medium low heat and add oil.
Sauté onion, garlic, and spices over medium low heat until onions have softened.
Transfer cooked vegetables to a mixing bowl.
Drain beans and set liquid aside. Add the drained beans to the vegetable mixture and stir.
Add the egg and breadcrumbs to the mixing bowl and stir.
Add the ground pork and breadcrumbs to the mixing bowl and stir.
Transfer the mixture to a loaf pan lined with parchment or foil and spread into a flat even layer.
Let the meatloaf rest at room temperature for 8-10 minutes.
After resting, bake meatloaf uncovered until reaching an internal temperature of 160oF. This should take approximately 40-50 minutes depending on shape of loaf.
Cool at room temperature for 10 minutes before removing from pan and slicing.
For the Sauce:
Whisk the brown sugar, cornstarch, and beer (or water) to the reserved mustard sauce from the beans. Simmer in a saucepan until thickened slightly, then serve over sliced meatloaf.
