Mustard Bean & Pork Meatball

24 meatballs (1 - 1 1/4" diameter)
 
                  Ingredients
- 2 Tbsp vegetable oil, divided 
- 1/2 Cup white onion, diced 1/4" 
- 1 Tbsp Chopped garlic 
- 1/2 tsp Ground black pepper 
- 1/2 tsp Salt 
- 1 tsp Paprika 
- 
                
1 Can Serious Bean Co. Southern Mustard-Q BBQ Beans 
- 1 Egg 
- 1 lb. Ground pork 
- 1/2 Cup Breadcrumbs 
- 1/2 Cup Beer (or water) 
Directions
- Heat a skillet over medium low heat and add 1 Tbsp oil. 
- Saute onion, garlic, and spices over medium low heat. 
- Transfer cooked vegetables to a mixing bowl. 
- Drain beans and set liquid aside. Add the beans to the vegetable mixture and stir. 
- Add the egg and breadcrumbs to the mixing bowl and stir. 
- Add the ground pork and breadcrumbs to the mixing bowl and stir. 
- Form the mixture into 1 - 1 1/4" balls. 
- Heat the skillet over medium heat and add 1 Tbsp oil. 
- Brown the meatballs. 
- Add the mustard sauce from the beans and beer (or water) to the saucepan with the meatballs. 
- Reduce heat to low and simmer for 10 minutes to absorb the flavor of the sauce.
