Mustard Bean & Pork Meatball
24 meatballs (1 - 1 1/4" diameter)
2 Tbsp vegetable oil, divided
1/2 Cup white onion, diced 1/4"
1 Tbsp Chopped garlic
1/2 tsp Ground black pepper
1/2 tsp Salt
1 tsp Paprika
1 Can Serious Bean Co. Southern Mustard-Q BBQ Beans
1 lb. Ground pork
1/2 Cup Breadcrumbs
1/2 Cup Beer (or water)
Heat a skillet over medium low heat and add 1 Tbsp oil.
Saute onion, garlic, and spices over medium low heat.
Transfer cooked vegetables to a mixing bowl.
Drain beans and set liquid aside. Add the beans to the vegetable mixture and stir.
Add the egg and breadcrumbs to the mixing bowl and stir.
Add the ground pork and breadcrumbs to the mixing bowl and stir.
Form the mixture into 1 - 1 1/4" balls.
Heat the skillet over medium heat and add 1 Tbsp oil.
Brown the meatballs.
Add the mustard sauce from the beans and beer (or water) to the saucepan with the meatballs.
Reduce heat to low and simmer for 10 minutes to absorb the flavor of the sauce.
