Southwest Black Bean & Chicken Enchiladas
2 Cans Serious Bean Co. Southwest Smokehouse Black Beans
2 cups of cooked chicken
3 roasted poblano peppers peeled and chopped up
2 cans of your favorite Enchilada Sauce
1 jar of green salsa or red salsa
2 cups of grated cheddar cheese
10 medium flour tortillas
Heat oven to 425 degrees.
In a bowl mix beans, chicken, poblano peppers, 1 cup of cheddar cheese and 1/4 cup of enchilada sauce.
In an oven proof 9X13 pan pour 1/2 cup of enchilada sauce and 1/4 cup of salsa on the bottom.
Take flour tortillas and spoon in black bean filling to the tortillas.
Roll them up and put seam side down in the pan.
Finish with the rest of the tortillas and filling.
Drizzle more enchilada sauce on top and salsa.
Add more cheese and sliced jalapeños.
Cook in oven uncovered for about 25 to 30 minutes or until it starts to brown.
