                  Ingredients
- 
                
2 Cans Serious Bean Co. Southwest Smokehouse Black Beans 
- 2 cups of cooked chicken 
- 3 roasted poblano peppers peeled and chopped up 
- 2 cans of your favorite Enchilada Sauce 
- 1 jar of green salsa or red salsa 
- 2 cups of grated cheddar cheese 
- 10 medium flour tortillas 
- Sliced jalapeños 
Directions
- Heat oven to 425 degrees. 
- In a bowl mix beans, chicken, poblano peppers, 1 cup of cheddar cheese and 1/4 cup of enchilada sauce. 
- In an oven proof 9X13 pan pour 1/2 cup of enchilada sauce and 1/4 cup of salsa on the bottom. 
- Take flour tortillas and spoon in black bean filling to the tortillas. 
- Roll them up and put seam side down in the pan. 
- Finish with the rest of the tortillas and filling. 
- Drizzle more enchilada sauce on top and salsa. 
- Add more cheese and sliced jalapeños. 
- Cook in oven uncovered for about 25 to 30 minutes or until it starts to brown.
